What’s the difference between Hachiya persimmons and Fuyu persimmons? Both are delicious but have different qualities!
Fuyu persimmons (my personal favorite!)
Fuyu persimmons have a flatter more rounder shape and have a pleasant subtle sweet taste even when the fruit is still firm to the touch. To prepare, simply peel the outer skin and remove the green leaves on top of the fruit. It’s optional, but I perfer to cut out the ‘core’ of this variety of persimmon.

Hachiya persimmons
Hachiya persimmons are larger and longer in shape. These variety of persimmons must sit out and ripen until the fruit is very soft and mushy to the touch. Otherwise if eaten while they are still firm, they will taste extremely astringent. To enjoy a Hachiya persimmon once ripe, simply slice in half and scoop out the sweet, soft, and almost pudding like flesh with a spoon. You can also freeze these when ripe to enjoy a sweet treat!
