no bake date granola bars

Ingredients:
1 1/4 Cup – Old-fashioned Rolled Oats
1/2 Cup – Natural Runny Peanut Butter
2 Tbsp – Honey
1 Pinch – Sea Salt
2 Cups – Pitted Medjool Dates
1/2 cup – Semi-sweet Chocolate Chips
optional add-ins: chia seeds, nuts, etc.
Directions:
Combine the old-fashioned rolled oats with a handful of your optional add-ins.
Combine with peanut butter, honey, and a pinch of salt.
Line the bottom of any baking dish/container with parchment paper and using a spoon, press down the oat mixture into the vessel of choice.
On a separate sheet of parchment lay down the pitted dates to cover approximately the size of the oat-containing vessel. Layer another sheet of parchment on top and slightly flatten out the date layer so it becomes a single sheet of date using a rolling pin.
Remove the top layer of parchment and using the bottom layer of parchment, flip it parchment side up straight over the compacted oats.
Gently press the dates to the oats and remove the parchment paper.
In a separate bowl, melt down the chocolate chips and spread over the date layer.
Optionally add a sprinkling of extra sea salt and slivered almonds over the chocolate and let it set in the fridge until the chocolate is completely hardened.
Cut into desired pieces and store in the fridge to save for later.
