crispy scallion pancakes

Ingredients: (makes 4 large pancakes)

  • 2 1/2 Cups – All-purpose Flour

  • 1 Cup – Warm Water

  • 1 Bunch Scallions

  • As needed – Canola oil


Directions:

  1. Combine the all-purpose flour and the warm water with chopsticks.

  2. Dump out the scraggly dough and knead the dough until smooth.

  3. Brush with oil and cover with plastic wrap and let rest for 25 minutes to an hour.

  4. Wash and cut scallions into thin slices.

  5. Divide dough into 4 and keep the other 3 covered while you roll it out as thin as possible.

  6. Brush with oil and sprinkle scallions.

  7. Roll into a tight log, then roll that log into a circle.

  8. Roll out the circle into thin flat disks and pan fry with a generous amount of oil.
