Veggie Spring Roles

Ingredients:

  • rice paper (accessible at many Asian grocery stores)

  • Your choice of veggies: lettuce, cabbage, carrots, bell peppers, ect


Instructions:

  1. Thinly slice up your choice of vegetables while you heat up water on the stove



  2. Before the water starts to simmer, remove from heat and move to a large bowl (should be the size of the diameter of the rice paper)

  3. Dip both sides of the rice paper into the hot water (watch your fingers!) and place flat on a plate

  4. Place your assortment of sliced vegetables and roll like a mini burrito

  5. Slice in half and enjoy!
